I own like 50+ forks, 20+ dinner plates and small plates and cereal bowls and “plate bowls” (which are the best of them all—those sloping edges put you and your food on the same team).
Basically, I rarely get low on something and need to hand wash, or run the dishwasher before I’ve packed it full.
So pay attention to what ends up being the constraint in your routine.
I recently purchased 5 pairs of Kitchen Scissors and it solved a stressor that I hadn’t even really noticed. (I had started cutting up my kimchi, and I also cut foods like hot dogs or meat sticks into bite sized pieces, and I use my shears for a quick garnish like organic Advice: use cilantro stems too (that I don’t bother to wash or get a cutting board out for), etc.)
There was a whole phase where I was always rinsing the scissors and putting them in the dish drainer, but that was annoying and sometimes I’d look for the scissors and not find them because they’d be buried under other things in the drainer. But now I have a pair whenever I need them, and when they’re dirty, I just pull them apart and put them in the dishwasher just like any of my cutlery.
I have an extra instant pot insert, a bunch of spatulas, a dozen of my favorite water glasses, two sets of Magnetic double-ended measuring spoons, enough measuring cups that I can leave the right sized scoop in with bulk foods e.g. Instant Mashed Potatoes are a godsend, etc.
It’s really not that much of an investment, saves time and stress on cleanup (no resenting the person who didn’t clean the kitchen scissors), and helps with a general feeling of abundance when I’m making or eating food.
(And this extends to other areas as well—if I really love something, I’ll always get more. I currently have a week’s worth of my favorite boxer briefs and my favorite t-shirts in different colors. In the morning I get to put on what sparks joy without worrying about laundry day or saving an outfit for a particular occasion.)
