Turns out they’re a wonderful comfort food that can be prepared so quickly and easily that I can manage them even on my hardest days.
Bob’s Red Mill has a garlic-free version, and due to a sensitivity at my house I haven’t branched out. So I don’t know if they’re the best instant mashed potatoes, but they are perfect for my purposes.

I actually think the frozen bagged mashed potatoes from Trader Joe’s are probably better (they’re significantly less processed), but you’d need more freezer space (and a TJ’s 😅). They include milk and butter and salt pre-mixed, though I still add things: salt & pepper, extra milk, sour cream & chives, etc.
