There’s a solution! This thing nests into your disposal and lets water drain through while preventing things from accidentally slipping down the hole.

(I first discovered this at a friend’s house with toddlers, and a lot of the advertising seems to center around preventing kid things from going down the disposal, so maybe it’s particularly useful if you have small children around? I’ll add it to that section just in case)
I never fill my sink (a combination of Foaming dish soap + Bounty select-a-size paper towels + if there are a lot of hand washable dishes, there’s probably a pot I can use as a bowl), but if that’s a thing you want to do, it looks like they have a version that will also function as a drain plug:
