Ginger snaps + pumpkin dip = modular/snackable pumpkin pie.
Swedish ginger snaps are much thinner and crispier than American ginger snaps (which I find pretty hard and not really “snappy” at all). The Swedish ones kind of give this a chips+dip vibe. But obviously you can make this work with whatever gingersnaps you have on hand.
I get my Swedish ginger snaps from Nyåkers at Cost Plus World Market (they usually have Thanksgiving sales). They have these amazing tins which are great to bring to a party or give as a gift, but they also have smaller boxes and at the holidays they have ones that are shaped like fun things rather than just round discs.
The Perfect Health Diet and my Congee (and related Chinese medicine/energetics) folks are 👎 on wheat (especially if it isn’t organic), but these are made in Sweden so I don’t feel quite as bad making an exception at the holidays.
This is my aunt’s recipe for pumpkin dip (you could probably adjust it to be more like your favorite pumpkin pie if you like):
Mix together
