The best chips are Juanita’s (and the best salsa isn’t salsa)

Juanita’s tortilla chips have great texture & taste — one of the few tortilla chips that really don’t need to be dipped into anything. (Closest I’ve found to the ones they make from scratch in restaurants.)

*Obligatory reminder that the 🍱Perfect Health Diet forbids corn and processed foods :/ and it should also be noted that they don’t have an infinite shelf-life. Best to eat them fresh.

But they’re a great vehicle for the best salsa: fresh cabbage pico de gallo (basically a Mexican coleslaw)

(Turns out these chips are regional to the PNW, but they ship from Target—just don’t order laundry detergent at the same time because they will 100% put them in a box together 😬. They go by another name in other states, e.g. at Safeway and Raley’s they’re called “JUANTONIO’S” 🇲🇽)

I don’t have an exact recipe (I usually get it at the local grocery store where my dad lives—they make it fresh).

But the ingredients are pretty simple:

Cabbage
Jalapeño (I prefer pickled)
Cilantro (I always include the stems as well as the leaves)
Tomato (diced)
Pepper
Salt
Orange juice (just a splash to keep everything moist)

This is how it should look when you’re done—no blending, just chopping:
