Fresh corn on the cob is one of my favorite summer treats.
I try to adhere to the Perfect Health Diet so corn is generally off the menu, but when it’s fresh and ripe in the summer (look for silks that are still in good shape and eat it asap before the sugars convert to starch), I make an exception (I splurge on organic when it’s available).
Two things make it super-simple:
- You can just put the entire ear, husk and all, in the microwave for a few minutes. No boiling water, no getting the grill going, just delicious corn in 5-8 minutes (1-3 ears).
- When you remove the ears from the microwave (careful, they’ll be hot — I use a clean dish towel), take a serrated knife and cut into the kernels all the way around the bottom near the stem. Then grasp that end with one hand and the silks end with the other, and you’ll be able to pull the husk and silks right off like a sleeve.
Grab some butter and salt and you’re in business!
But while you’re here: “elotes” or “Mexican Street Corn” is wildly delicious and probably worth trying.
